If the stack you had selected when you set the invasion up is too big, you'll notice none of your divisions assigned to it. The fewer units you have assigned to the invasion, the less planning you need to do.
After you've picked a landing point you can click a few more adjacent provinces to the landing zone to expand it out a bit (i think there's a requirement to beach on provinces adjacent to the same sea province too) You'll then have to wait for the plan to prepare before it can launch. Then it will ask you to right click (i think, dont have game open atm, tooltip will say) the landing point. It will prompt you to click a port the invasion will launch from.
